Ethanol is produced by yeast under anareobic respiration.
When Glucose is converted into 2 Pyruvic acid yeast converts this into 2 Ethanol and 2 Carbon Dioxide.

Or simply.

C6H1206 + yeast -> 2C2H50H + 2CO2
Enzyme is zymase.
